Lately, I’ve been eating a lot of furikake salmon at our church potlucks that I wanted to make it home for our lunches. I was lucky to find that there was a sale for frozen salmon fillets at Walmart yesterday. It was 2 lbs for $12 and there were eight 1-inch fillets in one bag. Salmon is uber expensive here in Hawaii so I thought it was a great deal and got two bags. If you know any other places I can get cheap salmon, please let me know!
When I got my first full-time job after college, I was given a bunch of forms to fill out and I had to make decisions on beneficiaries, taxes, and health care. After taxes, figuring out my health plan was difficult because there were so many choices, scenarios, and prices to consider. I finally chose the most expensive plan since it was the most comprehensive, thinking I would be fully covered if something happened to me (mistake #1). A couple of months ago, I read article from Business Insider about Barack Obama and Mark Zuckerberg wearing practically the same clothes everyday because they have bigger things to worry about than making decisions about clothes (like saving the world or fixing facebook notifications!). There was also another article about Matilda Kahl, an art director, who wears the exact same shirt and pants to work. She says it saves her time and energy that she could put towards making creative decisions. Wearing the same clothes everyday resonated with me because, even though I don’t wear the same thing everyday, I’ve been sticking to the same set of outfits to work, church, and home. I’m not a morning person and I’m usually rushing to work so I hate stressing over what top matches what skirt or pants in the morning. By having the same set of outfits to choose from, I don’t spend more than 5 minutes figuring out what to wear for the day. Read more
I wanted to incorporate books into our wedding last year because I love books and reading. I went to the library almost every week when I was younger and actually read over 4,000 children’s books the summer before fourth grade (I was in the local news for this! Hehe!). I haven’t been to the library in several years because I now listen to free audiobooks and read ebooks through our state library’s Overdrive app.

When I was in high school, I ate breakfast from the cafeteria with my friends. My favorite item on the menu was tuna patties with rice bento. It was so good that I usually bought a couple of these bentos to eat after school before I went to my after school activities. I tried to recreate it before but it didn’t turn out too well. I wanted to try again because I was craving some tuna patties and we had a bunch of canned tuna from back home (it’s the best!). I looked up various recipes but there was a lot of ingredients that I didn’t have in my pantry so I just used whatever I had. I wanted to add some vegetables to this dish (the ones from high school had carrots and potatoes) but all I had was a red bell pepper, which complemented the tuna perfectly. Read more
A few days ago, I borrowed the book “Go Green, Live Rich” by David Bach. I borrowed the book because I was inspired by one of my high school classmate’s post on eco-friendly fashion to find ways to live a greener life. I’ve tried to incorporate better habits over the years like recycling, saving water, turning off unused lights, etc. However, I’ve chosen not to buy into a green lifestyle because I’ve found that green products were usually out of my price range. After reading his book, however, I’ve realized that it is possible for us to afford an eco-friendly life. Read more
When I was younger, I wanted to build my own personal library as big as the one in Beauty and the Beast. I love reading and collecting books. I practically grew up in our public and school libraries from elementary to high school. At home, I was building up my a collection of over 100 books (including complete paperback AND hardcover of the Harry Potter series!) which I left when I moved here for college. Then I discovered the astronomical cost of textbooks (especially for my science courses) so the only books I could really afford to add to my bookshelf were textbooks. I could borrow books from our university’s library, but it was mainly academic books rather that the non-fiction I loved to read. I also didn’t use the public library too much during this time since I had other things on my mind: school, church, my job, and this was the time that social media began so I had other things to occupy my time (I remember when facebook was only for college students!). Earlier this month, my husband and I went to Kauai for four days to support our friends who were competing in a basketball championship. We were planning to go to a neighbor island for our first year wedding anniversary last month but we decided to celebrate our anniversary with a Kauai trip with our friends. This was our first trip to Kauai and we weren’t disappointed. Even though many guidebooks and online articles provided a lot of information on beaches to go to, snorkeling spots, and hiking trails, we couldn’t really fit it into our itinerary because our schedule was centered around our tubing timeslot, dinner cruise schedule, and the basketball championship. It also rained on the last day of our trip so we spent the day packing and going on a mini food tour: Hamura Saimin for the lilikoi chiffon cake, Wailua Shave Ice for the lava flow shave ice, Fish Express for the spicy lobster poke, and Chicken in a Barrel for their tender bbq chicken and beef. My husband and I usually prepare our breakfast and lunches the night before because we don’t get up early enough to prepare our meals. For this week, I wanted to make us breakfast burritos to mix it up a bit since we’ve just been eating bread, cereal, oatmeal, and whatever random things we can find in the fridge for breakfast. I added chicken breakfast sausage, bell peppers, and carrots to our burritos but you can add other vegetables or protein that you want. We also used two different types of tortilla: I wanted the spinach flavor and my husband wanted whole wheat. Just make sure that it’s big enough for a burrito. These grab and go burritos will be good in the fridge for up to one month but I have a feeling that we’ll probably finish these much sooner. Read more
Chicken Kelaguen is a Chamorro dish from the Northern Mariana Islands and Guam. I grew up eating different variations of kelaguen: beef, chicken, shrimp, with red ginger, with fresh grated coconut, etc for snack, lunch, dinner, and at parties. It is usually eaten with corn or flour & coconut milk (sweetened) titiyas, which are like tortillas or pita bread. It similar to ceviche because it is “cooked” in lemon juice but it is different from ceviche because most kelaguen recipes use ingredients like onions, green onions, grated coconut, salt and pepper, and lemon instead of limes, tomatoes, and cilantro.
